In our little landhouse Miniera, everything gravitates around our "Perle Nere" (black pearls) - tiny little black olives which grow on a limited number of wild olive trees. It's them who give us the inspiration and the enthusiasm to proceed with our project:
to transform our Perle Nere in a piece of art.
/growing/harvesting
Podere Miniera produces exclusively Extra Virgin Olive Oil, and only the amount of oil that can be produced from its olive trees.
The aim of our three productions (October, November, December) is to describe the flavor of the olives and how it changes during the three harvest periods: beginning with a green fruit, intense in its bitterness and pungency, passing through a game of organoletic sensations, arriving to a ripe and sage taste with floral flavors.

The Extra Virgin Olive Oil Perle Nere is produced from handpicked olives which are immediately crushed in our modern, continuous and automatic extraction machine for the production of cold pressed high quality extra virgin olive oil. The two phase separation technology allows to conserve the flavor, the aroma and the precious organoletic properties.
/bottling
Following a natural decantation, the Extra Virgin Olive Oil Perle Nere becomes our
October, November, December production:
October, a young oil, yet well-balanced, jaunty and cheerful.
November, an olive oil in transition, adult but not too much.
December, an adult oil, conscious and sedate.
